You might want to order a BBQ Guru CyberQ. It's a fan that fits in the lower air vent that is connected to an electronic device. You set the cooking temp and the finished meat temp. The device is also connected to probes that you put in your meat. It regulates the air flow to get your cooking temperature set and then you just go about your business. It's controllable from your smart phone or computer. So for anything you're going to do low and slow, build your fire, put in some smoking chunks, set the device and take off. When the meat reaches the desired temp, the devise will alert you it's done and lower the dome temp to equal the meat temp so it doesn't dry out.

It's cheating, and lazy, but I don't care.

Pulled pork is a great way to start. Hard to mess up.
I like the Rooster BBQ youtube. Great way to learn and I really like the recipes

Welcome to the club! If I remember correctly, you should probably keep the first several cooks below a certain temp - I believe around 300. Ribs are pretty easy and a fun way to spend a couple of hours.

I'm a big fan of the rubs at Meat Church (https://www.meatchurch.com/) and they have some pretty good recipes, too.
