Looking to do a nice 8 lb prime rib. Usually I do this in the smoker. Looking to use my Sous Vide more. Would you smoke it for a little? 30min? Then Sous Vide or Sous Vide and smoke for last bit? Or smoke then Sous Vide then sear over hot coals? Any of you done this?

Low heat smoke for 1 hour, rub and sous vide until cooked 135 degrees for med rare, finally sear before serving.

It is best to seperate the ribs from the roast and cook seperately since require different cook times

Sous Vide a 14lb prime rib for Christmas - finished in oven for crust

Roast was large enough that I did not serve the rib and saved them for a trip to the smoker later
