1. Not overly touristy but some action whether that be a small city, markets, restaurants
2. Is there a place where you can still go in Greece that is reasonably affordable? Don't want cheap ville but would like something that might be undiscovered.
3. Beautiful beaches and homes on the cliffs
4. Food, food, food
5. Relatively close to an airport...

Spent 12 days in November. Believe it or not a Greek cruise was a great and economical way to see a lot.
Started in Athens with the Acropolis. Parthenon and the must see Acropolis museum. The city itself is dirty and poor since the whole place is bankrupt and unemployment is high. Check out the sites I mentioned and get on the boat.
Our trip took us to the resort island, Mykonos. An excellent side excursion was to the island of Delos and the best preserved ruins of any excavation in the world. It's the birthplace of Apollo and predates Christianity by 1000 years.
Our favorite island was Rhodes bordered by the Mediterranean on one coast and the Aegean on the other. Beautiful beaches, fortifications and architecture by Greeks, Ottomans and Italians. Was actually part of Italy until 1946.
The bonus of our cruise was a day in Galilee (Nazareth, Capurnia, River Jordan) and two days in Bethlehem, Jerusalem and Dead Sea.
Next was the largest Greek island of Crete which has some wonderful ruins of the Minoan civilization.
We had a day in Malta which has the best harbor and fortifications in the Mediterranean. It has a mixed culture and language of Greek, Italian, Ottoman and British. It was home to the WWII battle of Malta as well as the Knights Templar Knights of Malta. Was a British possession until 1964.
A great taste of Greece. We took the Celebrity Line. They run some great deals.
