Not necessarily. You get more protien grammage per pound by going lean. More bang for the buck.

If you're not trolling, I get it. Most briskets aren't cooked properly and the fat is just a chewy gelatinous mess.

A properly cooked fatty brisket, though, has fat that literally melts into juice in your mouth. Hence it typically called moist brisket instead of fatty.

Instead of being chewy and fatty, it just feels tender and moist. Hard to find brisket like this outside of central Texas, tho.

Franklin is unmatched but John Lewis of LaBBQ is a verrryyy close second.

Valentina's and Stiles Switch are also fantastic. The former sometimes offers a brisket queso which is the best queso I've ever had.

Agreed. Freedman's is also very good as there's no line to contend with. A bit pricey, but a solid alternative to the other places you mentioned.

I've been to Franklin 3 times and must say, I find it singular is Brisket. I have a buddy who get really close as Aaron taught him how to do it. However, there is no way in hell I'm standing in that line, ever. There is lots of really good que to be had all over this state and a lot of really bad, also. I'm 4th generation Texan, grew up on cue, got seriously into smoking when I was younger, have traveled the trails many times, but I have to say, I just don't get the fascination with it. There are a lot of other things I'd rather eat.

Franklin does a pre-order? I didn't know that. I know the Trough or 5 lb order at the express line at Pecan Lodge. Is it the same?

Last time I did it required 24 hour notice. But just call or email in advance. They'll take care of you. When I did Aaron actually picked up.

Awesome, good to know that. I don't get down to Austin as much as I have the last several years but I will for sure do this sometime.
