Much like my (in)famous burger tour of Waco, I say it is time to find the best Mexican this town has to offer. Now when I say taco, I mean that in the most liberal way possible. Really it will be a ranking of Latin American eateries in Waco that are not table service restaurants. This can be anything from a taco truck to Taco Bell and everything in between. That will make ranking hard so there will probably sub categories and special recognitions throughout the way.

(Also I'm sure that, just like the burger thread, I will get bored of the idea and abandon the project at some point.)

I'll post my first reviews today or tomorrow.

I think you should just call these "tours" "What I had for lunch today..." Would be more appropriately labeled that way.

First was Trompo King (truck) which usually posts up across the street from the fairgrounds on Bosque at a gas station.

Trompo is relatively rare in Waco (La Milpa and a couple other trucks also have it) and is one of my favorite types of taco. It was pretty good with solid salsa and the seasoning on the meat was great. My wife was disappointed in a few tortillas being undercooked, but we will return. It isnt going to be in first overall, but is a solid pick. They have the usual other stuff outside of Trumpo and tacos (tortas, burritos, etc...) but we haven't tried it. You can order in either Spanish or English.

2nd stop is La Milpa which is just up LaSalle from Taqueria Zacatecas if you're coming from Baylor. It is only open Wed-Sun and really gets busy on weekend nights when the quinces are over. The menu is large with tacos, gorditas, tortas, and nachos being the prime movers. Looked like they were dealing a lot of elote when we were there and they had crunched up doritos, fritos, and hot cheetos to add to it for free which is nice. I got the trompo tacos (of course) and the wife got some nachos and a gordita de rajas. All of it was good and La Milpa is one our favorites so we weren't surprised. The trompo itself is better at Trumpo King but as a taqueria overall La Milpa was better. You can order in Spanish or English, but Spanish is preferred with some workers.

Can you add some more detail like salsas and quality of tortilla. I am assuming here in Waco they are all using similar tortillas. So the meat and salsa will be the difference

Correct for the most part on tortillas. I'll add more details to the future ones. I'm almost always going to be having salsa verde unless it's a breakfast taco so most of my reviews will start from there. The salsa at Trompo King was slightly above average but certainly not top tier in the city. La Milpa's basic tomatillo salsa is a bit disappointing, but not terrible, just standard.

La Milpa was a weekly visit my senior year at Baylor, their tortas are some of the products to ever come from a food truck IMO

Well #3 on the list breaks us from traditional Mexican and is instead a Central American/Mexican fusion. I was working out by the airport, so I decided to hit a North Waco spot. I went to Pupuseria Mix which is a brick and mortar on Proctor which recently has been a bit of a TikTok/Instagram Reel sensation according to my wife who is on such applications. There was a single lady working the entire restaurant by herself with two groups waiting on their food when I arrived. Their menu is a mixture of Honduran, Salvadoran, and Mexican food, but the star of the show is the pupusa. I was the only non-Hispanic in the building while I was there and I also didn't hear a word of English in the building while I was there either, so I'm not sure if there would be a language barrier for anyone that doesn't speak Spanish. The lady was incredibly nice and offered me both types of salsas and was asking if I had been there before while she was frantically filling orders. I'm in no way an expert on Central American food, but the pupusa was the best I've had in town (I'll review a couple of other Central American spots in the future). The green was spicy but not overly spicy and was really solid and creamy. The red was fine, but I always pick green anyway so that wasn't an issue. the repollo it came with was mixed with jalapenos which was a nice touch for added flavor. the pupusa itself was obviously homemade and had a great consistency that you want with a thick masa product. The carne itself was average, but not the star of the show here with beans and cheese doing more work overall.

Now on the rankings it is difficult to compare tacos to pupusas, but the science must be done. I will be creating a separate rating for dessert places though as science can only teach us so much before God takes over.
