I'm not sure what happened to this thread but I can't find it anywhere.... It's been a difficult year.... semi-retiring and immediately starting a new job, my son getting married and then multiple surgeries.... I haven't felt much like cooking this year....
back in February work had an International Lunch Pot Luck and I rep'd LA with an Ansouille sausage and Cajun spiced chicken Gumbo... Took a full pot and came home with an empty one.... the best was this girl that came up and said it was one of the best Gumbo's she'd ever had, which was nice, but then she said her Dad owns Ragin Cajun Seafood in Houston, so that made it even better....
Then last week I grilled a nice salmon fillet and did a white wine and butter sauce with grilled shrimp and a few grilled scallops then topped that with fresh pico de gallo It matched well with the sweetness of the oven roasted zucchini and summer squash
