made some Ramen tonight, was a bit rushed for the Picture, needs to be a bit tidier, but i cant fix it now



Rice Noodles are on the bottom, then Beansprouts, Pak Choi, Spinach, Slow Roasted Belly Pork marinated in Ginger, Garlic, Rice Wine, Soy Sauce and Honey, finished in a pan with a bit more Soy and Honey, Soft boiled egg, then the broth was poured over, which was a stock made from Chicken carcasses, Carrot, Onion, Celery, Garlic, ginger, Chinese 5 spice, Miso, a touch of Chilli sauce, Honey, Soy sauce and Worcester sauce and then some chopped Spring onions and black Sesame seeds to garnish, it was damn tasty

Made some Korean BBQ for tea tonight, had Bulgogi (Marinated Rib eye cooked on the Chargrill), Dwaeji golbi (Slow Cooked, Marinated Pork Ribs, finished by Broiling for 10 minutes), Kimchi (essentially Fermented Pak choi, Carrot, Spring Onion and Radish, though i only "fermented" it for 24 hours), Gaji Namul (Steamed Eggplant) and Sigemuchi Namul (Spinach in a Soy dressing.)

no pictures, but i cooked a meal for my Mums birthday yesterday

Starters:

Prawn Toast and Tempura Prawns

Main Course:

Crispy Duck with Plum sauce, Pancakes, Spring Onion and Cucumber, Special Fried Rice, Char-Sui Pork Buns and minced Prawn and Lemongrass Dumplings

Desert:

Banana Bread and Butter Pudding with Salted Caramel Ice Cream

The Ice Cream, Char-Sui buns, Pancakes and both Starters were store brought, the rest was made from scratch, Plum sauce and the B&B pudding (made with Croissants, not Bread) both turned out perfectly, the Rice was great, the Duck was ever so slightly over-done, but was still delicious

im currently perfecting my Cinnamon Bun recipe, the first batch last week was a bit of a bust due to old Yeast (they rose a little, but not really enough), but the second batch this week were much better and hopefully perfection will be achieved next weekend

Been starting my preparations for Christmas, have made Stollen, Panettone and cold smoked some Nuts, Butter, Duck Breast and Cheese (Cheddar, Wenslydale and Gouda) this week and in the next week or so will be making Pastrami, Maple cured Bacon, cold smoked Salmon and a couple of things i havent pinned down yet, love christmas

here is the first of the above goodies, 25 slices (there was 26, but, you know, had to check it to see if it was safe to eat ) of home cured Maple Bacon, I prefer using Loin of Pork to make Bacon, i dont think its as common in the States and most of you eat streaky bacon from the Belly?



I should have some more Bacon to slice tomorrow, that one has been cured in Beer and Black Treacle, so hopefully will look pretty different to todays offering!

Some Sicilian wintertime comfort food last night. Home made rigatoni with Italian sausage, wine, fennel seeds & fennel fronds, onions, carrots, celery, and parsley. A great dish on a cold January evening.

The rigatoni. This ends up taking a little while and I don't do it as well as my other pastas. I have trouble with most of the tube pastas.



Blended with the sausage, etc.

made some sushi today, first time trying it, very happy with some of it (the sushi rolls (with avocado, cooked salmon and roasted yellow pepper), quick cured Mackerel in the top right and the actual fish on the rice (Salmon, Tiger Prawn and Tuna), think i might have used a little too mkuch rice underneath them though! took a lot longer than i thought it would, lots of time consuming steps for some things. Tasted great though!

Sushi is something I know don't much about it, but every time I've had it I've really enjoyed it. One of these days I'm going to get serious about learning more and trying more.

Sushi is something I know don't much about it, but every time I've had it I've really enjoyed it. One of these days I'm going to get serious about learning more and trying more.
I like challenging myself and learning new styles of cuisine and Sushi was something ive been meaning to try for a long time. The main issue is locating truly fresh, Sushi grade fish (it needs to have been prepared asap) for me, but i did it and it wasnt as difficult as i thought, if you are looking to try making your own sushi, im happy to help with my limited knowledge on it!

We had an I Lunch (International Lunch) where folks signed up to bring food from their ethnic heritage. We had German, Spanish, British, French, Russian, African, Indian, Palestinian, Greek, Mexican, Guatemalan, Argentinian, and Cajun.

I don't really have an ethnic heritage, but I love NOLA so I made a big pot of Gumbo...

I told Natalie that we could have what was left for dinner that night....

I didnt take Photos because it wasnt that photogenic, but for my Evening meal tonight i made Tacos Al Pastor, Calbacitas con Elotes, Guacamole, Frijoles Charros and Mango, Black Bean and Lime Salad, all from scratch, it was lovely

A seasonal favorite for appetizers here at our house. Zucchini flowers, stuffed with a piece of provolone cheese and an anchovy, dipped in beer batter, and fried. A really great taste, but it's basically a one-month per year deal.

Tried some new stuff tonight that was a score. Portobello mushrooms with a dry rub that has brown sugar, hot paprika, kosher salt, onion powder, garlic powder, black pepper, cumin seed, and dry mustard. Really good. Entree was pork tenderloin with jalapeno gravy, also really, really good. The gravy is jalapenos, butter, flour, chicken stock, and half & half. For dessert, home made dark chocolate chip gelato with hazelnut croccante (sort of the hazelnut equivalent of peanut brittle). So much for the weight I've lost eating at home with the pandemic...
