Last night we did three of our favorite things together. After losing a bunch of weight last year I have been backsliding a little and this didn't help at all!

We did zucchini flowers, stuffed with provolone and an anchovy, dipped in beer batter and fried for appetizers.

Then we did hand made pasta with a mushroom ragu. We used mixed mushrooms, shallots, garlic, thyme, port wine, cream, and broth.



Then for dessert we did homemade chocolate-chocolate chip gelato with a hazelnut croccante sprinkled on top. The chocolate for the gelato was made from melted Ghirardelli chocolate squares and the chocolate chips from shavings of extra bitter chocolate. The hazelnut croccante is hazelnuts blended with corn syrup, sugar, and butter. Cook up the goo then spread it on a flat tray to cool & harden, then break it into chunks to sprinkle on the gelato. Really, really tasty.

I'm really loving the new kitchen. Mrs. Surprised me by upgrading the hood to one with Bluetooth speakers so I can listen to my Spotify while creating.
Last night was a jumbo lump crab mixture wrapped in flounder fillets and baked in butter, and then topped with a silky Bechamel with melted Swiss Cheese and scallions

Looks delicious! Funny, we're the same way. We can't cook without Spotify. We crank it with a bluetooth speaker, although we're low end with just a portable one on the counter.

I got a Meat Grinder and Sausage Stuffer attachment for my KAM for Christmas, but didn't give it a test run until Spring Break. I turned a Pork Butt into Italian Sausage. I made my regular Sunday Gravy Tomato Sauce, grilled peppers, and served it on Creamy Polenta topped with Provolone

Following my Cancer surgery in December, my diet has changed quite a bit. I'm able to eat solid food, but I have to severely limit my intake of lipids while my intestines learn how to absorb fat without a stomach. I'm limited to one teaspoon of butter a day, and no food that is over 3g of fat per serving. So I've been on Baked or Grilled Chicken or Turkey Breast, Cod or Salmon, or 96/4 ground beef. Two weeks ago they added Shellfish, So I've had raw oysters and poached shrimp, and that has been nice.

Monday I tried a Baked Oyster with Spinach topped with Parmesan and Panko.

It's been awhile... I just don't have the stamina I had before the cancer... but I needed to cook.

Soooo... this is a Grilled Red Snapper on Rice Pilaf, and steamed broccoli covered in a Citrus Cilantro Buerre Blanc, topped with fresh Cilantro and Orange Slices.

My first foray into Korean Cuisine was a complete success. This Dak-galbi was amazing!!! The Asian Sweet Potato and sliced Rice Cakes were crazy good.
