so, im making some Shrimp Tacos on Monday and i want some side dishes, i have 3 locked down, Guac, of course, Mango and Black Bean salad (absolutely delicious, ive made it several times before) and a Grilled Sweetcorn Salsa, does anyone have any others they can recommend?

None of us eating on Monday like Chillis however, which, im aware, limits things a little, but still.

I will often make elote as a side for Mexican dinners but it will likely be too similar to the corn salsa you're already making (unless you change to a different salsa).

Another easy side is to cut spears of cucumber, pineapple, jicama, watermelon, cantaloupe, and/or mango and dust them with chile powder, salt, and lime juice (or chamoy if you have access to it)

And consider pickling some red onions for your tacos. You won't regret it.

You can also roast the corn in the oven if you don't want to grill it. And it's ok to serve the corn cut off the cob if you prefer it that way.

If Trump is recommending it, i might give it a miss, i do not trust the culinary opinion of a man who eats his Steak Well done and with Ketchup (it doesnt look bad though!)

Calabacitas would get along well with the other dishes. If you have extra shrimp, could add them also to kick things up a notch.

Spent a week in SW Mexico long ago, and can still remember some of the soups served twice daily.

I would definitely grill the corn, no matter what recipe you choose, but elotes = the bomb.

How about pico de gallo? Tomato, onion, Serrano or jalapeo pepper, cilantro, a little squeeze of lime sauce.

Consider some slow-simmered borracho beans.

Chips and queso.

Don't forget the tortillas.

Is pico a side dish? More of a condiment, no?

On that topic, I love some sliced radishes on tacos

I don't think you need another side unless you want to do rice or spicy grits. We cook faro and toss with green onions and cilantro as a sort of rice substitute sometimes

Call it what you want, it's necessary. Just wanted to ensure it was on the menu. The Brits need all aspects of good Mexican food in their lives.

seems like Jalapenos are an important part of Pico, otherwise its just a salsa and none of us like Chillis

Do you have a link for your mango & black bean dish? Would be interested in serving with my fish tacos Labor Day...

Thanks!

Sure, i just use this recipe (i dont use the Chilli or the Bell Pepper, tastes fine without): http://www.cookingchanneltv.com/recipes/kelsey-nixon/black-bean-salad-with-mango-cilantro-and-lime-1961570

It seems like an odd combination, but it really is very nice, one minor alteration to the recipe, i would maybe add the onions to the Vinaigrette 5-10 minutes before serving, takes a bit of the harshness out of them.. I also tend to make a bit extra of the vinaigrette and use it for any Salad or if im making a Salsa, it is a very nice Mexican dressing.

I read this thread hoping that tommie had posted some pictures of some "good Mexican side dishes." I am petty disappointed.
