Buying Meat

I know that many on this board enjoy grilling, smoking, sou vides and reverse searing meats so I thought I'd ask where do you buy your steaks, chops, briskets, etc.?

For some background--I typically buy any Prime or Choice steaks at Central Market and ocasionally Whole Foods. The pork chops are often an inch to 1.5 inches at CM and they're great. However, the quality of even the $32.00 Prime Tenderloin Filets or NY Strips have been very inconsistent. I go to HEB and get their prime meat when I'm trying to stay within a reasonable budget or if i'm in a hurry. I've heard good things about Costco, but haven't purchased any from there. I've also heard that Snake River Farms in Boise sells great Wagyu and other high quality meats online, but I have a hard time justifying paying that price.

If I'm buying good meats, I honestly go to my local butcher shops. Yes, they still exist. There is a great one on Main St in Lewisville that is not _that_ far from your house. Those kinds of places have always shot straight with me and actually know where there meat came from and what you want to avoid. They are a great resource. The guys at Country Meat Market in FW recognize me and we always get quality at a decent price.

I buy pork at CM as it is from Berkshire Hogs which have not been breed into "the other white meat" I typically buy strips of ribeye at CM or WH depending who has them on sale. I like CM as I can get different cuts such as Hanger (Onglet) I really like to buy Prime Sirloin at Costco. I find that to be the best bargain around. $10/lb. I tend to like steaks cooked in a skillet with some sort of pan sauce, and those work great. You can also make all different types of Kebabs with it and it's terrific. I like lamb from CM. It comes from Colorado and domestic lamb is much milder than New Zealand or Australian. One of my best friend's(BU grad) family runs about 850 head of Waygu out in Ennis. (Rosewood Waygu) I'm fortunate to get my hands on that regularly. They are going to open a butcher store on Lovers lane that will focus on Rosewood Waygu and craft beer. SB open in a month.

I tend to buy a lot of stuff from Costco. The brisket and pork belly prices there are usually REALLY good. In a pinch, I'll buy at CM or WF, but the prices are high. Hopefully, you get what you pay for. There's a butcher shop in N Plano (maybe S Frisco) called Matador that's a good spot (I think there's some Baylor ties with the owner or his wife). The butcher shop down in Deep Ellum, Rudolph's, is great too.

probably not relevant for recommendations, but i have a butchers literally 200 metres from my house and its so great to be able get Fresh, good quality meat and game whenever i want

Man I miss that. We lived in Paris for a summer 2 yrs ago and the meat guy, cheese lady and bread/pastry shop right there. Indeed handy

Farmer's Market in our town or the one over depending on the weekend the ranch we buy from is located. The ranch, that I can't spell, ranch has a grass fed beef sausage that is the best damn thing I've eaten at breakfast. Add in their generational bacon and I'm a happy man.

Oh, wine merchant right next to the Boulangie. Actually lost weight because I made everyone walk, metro, bikes. No taxis.

Matador is has good stuff, but you pay for it. Their baby back ribs look like mini pork chops and they have some great grass fed options for their steaks. Matt (I think?) is a BU grad and his wife is a Tech grad. Hirsch's in Plano is good as well.

I had some prime ribeye's from Costco the other night and they were great. I get my briskets at Costco as well. The instructors in the grill classes at Premier always talk up Local Yokel in McKinney. I haven't been, but I've got to be over there next week and am going to stop by.

oh, something i should mention about our butchers, where i live in England, we have a local "delicacy" which is Bacon thats been cured in Beer and black treacle, its really good and ive tried curing my own at home with decent results, its delicious

Where in England do u live? Any other interesting cuts or delicacies we need to know about? I've always thought British food was kinda underrated. Meat Pies anyone? Steak and Kidney? Black Pudding. Yum

What is 'black treacle'? That sounds highly suspicious. For reference, I have live in England twice and am familiar with the English definition of delicacy.

I live in the East of England in a rural county called Suffolk, loads of fresh meat of all types are fairly easy to get, a nice selection of game like Venison or Pheasant, decent Seafood selection, especially if you live near the coast, Theres a couple of nice local breweries, a very good Cider (and when i say Cider, i mean the alcoholic kind) manufacturer, we've got it pretty good for fresh food round here.

yeah, as someone else, said, Black Treacle = Molasses, and Black Bacon as its called, is absolutely delicious

Ah, I used to spend a lot of time in England on business. Coventry (Midlands), Swindon and London. Love England. Miss the people, food and beer/pubs. Oh, and I was just commenting to my wife that the BBC is putting out so much television lately. Luther, Happy Valley, Broadchurch, The Fall. Great Tele.

Broadchurch is ITV, but yes, English TV is in good health, for our top tier TV like the shows you mention, we tend to go for shorter series, which whilst means less to watch, it is of great quality, Line of Duty is another good one.
