That's a joke right? Tex-mex in Waco is as much a joke as BBQ and Italian were until a few years ago. I have my doubts Jorge's will be a difference maker in that category, but we'll see.

Just what Waco needed, another TexMex place that is more Tex than Mex. We only have 462345 of them now.

I told y'all months ago in another thread about this. It's not going to be a Tex-Mex joint. The "Mex" dishes are primarily going to be true Mexican sea food dishes. The other aspects are going to be a lot different. I've sampled several of the recipes the executive chef they hired to build the menu. Completely different than anything they've ever done and are on point.

It's still around. Sergio Garcia, the owner, has been operating it as Sergio's on Austin Avenue between 6th and 7th St. for the last 10-11 years. For old Wacoans, he's located where the original Elite Cafe was. It's essentially the same menu they have had for 25 years going back to the Siete Mares days. It's still BYOB, but a chance to enjoy nice wine with your meal and not break the bank. They're only open in the restaurant on Friday and Saturday night but they have a nice group of regulars. They don't have a large wait staff so it's never fast and it's downright slow on a crowded night. However, if you do like us and go with a mindset that you're not in a rush and you're just going to enjoy conversation with friends and family, it's great. The food is still really tasty. Plato pacifico is amazing - super spicy but also full of other great flavors.

He also does a food truck during the week at lunch and at the Farmers Market on Saturdays.
