Both schools have to agree on the game and opponent. I think they already had each other on the schedule so both had to fill the vacated spot in an effort to make the game work as part of the challenge. I could be wrong, but it's what I've heard fourth hand through the grapevine.

It has been a Rubik's cube puzzle the last 3-1/2 months to search for the 2021 matchups.

A&M will be an interesting matchup. They are usually one of the best teams in the country.
