yes, a little political, but what has happened to the Texas State Food? Price has gotten absolutely ridiculous. BBQ was created by smoking a cheep arse cut of meat into a delicacy. Now, it's $20 for a brisket Sammy???? $30 per lb for some Waygu Brisket. Hard for me to pay that. I'd do it myself, but live in an apartment and no more smoker. This blows. Had to be Biden.

Economists have been explaining it t you for decades. Regulations add costs, which get passed on to consumers. The global warming hysteria and associated regulations causes increased costs to produce and ship all goods including cattle, which rely on trucks to move cattle and then move steaks.

well, a reg brisket from the grocery store is expensive and then add shrinkage/fat rendering loss and you are looking at 10 a pound for the meat, no materials and labor costs. My smoked at home $10 a pound brisket is better than Uncle Dans but not close to Hutchins in Mckinney.

totally agree, but damn its pricey. Prolly the best way to do it is buy brisket at the grocery store on Labor Day, 4th, and Memorial Day. Unfortunately, no access to smoker anymore and 12hr is hard to carve out.

Lunch for 2 at Hutchins without pigging out is $80. As was posted, beef and labor costs are both up quite a bit.

I remember when Hutchins Twinkees were $4. Bargain. Now $6. Ouch but I'll pay whatever it takes. May need to swing by and buy some tomorrow.

I got into smoking as a hobby about 6 years ago. I'm so glad I did because BBQ prices have gotten insane.

You can get USDA Prime brisket at Costco for around $3.50 a pound. As mentioned above....after carving it and smoking it you will yield about half the weight. So prepared it's about $7 a lb.

Right now a pound of brisket is $36 at Hutchins. It is so good...but damn that price is ridiculous. Obviously...they know what they are doing with pricing though because they still have long lines.

I remember about 12 years ago we would drive up to Hutchins because they had all you
could eat BBQ for $17. Those were the days.

My new default is Big Als in Dallas at Inwood and Lemmon. They use choice brisket, not Waygu. Not Caddlack, Pecan Lodge, Terry Blacks , but much more reasonable and good, not great.

Wow, Big Al's 3 meat plate with 2 sides for $21 looks like a bargain with todays prices.

Goldees in FW has gotten incredibly expensive, but you could spend $700 to go to their one week
BBQ school and learn their secrets.


No thanks, their sides are great, their meat is above average but that's it. Above average, not great. They are not #1 in the state.

I have done better tastimg brisket than they have when I'm on. If I'm paying premium prices, I want premium results. Again, they are really good, not great.

I also like Slow Bone in Dallas . Sides are tremendous, good fried chicken, pork chop good too.

Damn yankees got hold of some and told everyone one about it. Screwed it up for all of us.

It's only going to get worse. YouTube has lots of videos of people taking Brits, Ausies, Germans etc to BBQ joints all over the state. They all rave about it. The demand just keeps goings up.

I hate two things; Illinois Nazis and BBQ eating, non-Texans- in that order but the gap is narrowing.

The BBQ business is an absolute ass-whipping mentally, physically and financially. WHen I had Jasper's, I was working 110-120hrs/wk most weeks....on sweat equity.....with an investor group that wouldn't put anymore into the business for equipment (even though I 5x'd our revenue and cut our costs by 40%). I told them to go f themselves because in 1 year I burned myself out. That was 12 years ago.

I think i'm going to buy a traeger or a reqteq pellet smoker this spring bc that way I can set it and forget it. Tending the fire for hours is fun but not on an overnight cook.

I love a good chopped beef but the usually get a pulled pork nowadays bc its $11 instead of $16 for the brisket at the closest bbq place to my house. I love me a pulled pork with coleslaw on top.

Live cattle and feeder cattle futures are about double from their pre-covid days. That's a big increase all by itself.

I believe the plant based meat researches told us their meat would be cheaper than real beef later on this decade. So look for prices to tank just any day now...right?

Living in Austin, I consider myself a brisket connoisseur, as I'm in about a 30 mile radius of the top bbq in the state. And I've been to them all. But I have to say, I'd put my brother in laws Trager "smoked" brisket up against them and I think it would fare very well.

I know some will say that's sacrilege.

Interesting. I use a weber smokey mountain buit i really do want a pellet smoker for brisket cooks bc I just cant stay up from 2-7am watching the fire and I want brisket ready by kickoff on football weekends.

Smokey Mountain is a good piece of equipment, particularly for the $. I'm not staying up checking fire either. Been there done that.
