I tried making strascinati for the first time tonight and it went pretty well. Puglian pasta made just from semolina (durum wheat) flour and water, pressed with three fingers to get the little wells to catch the sauce and rolled to get the outside ridges. We served it with shrimp in olive oil and white wine with arugula, tomatoes, fennel seeds, red pepper flakes, and pecorino cheese. Very tasty and really, really fast and easy. About 1/2 hour for my wife to peel shrimp, chop tomatoes, and cook and about 1/2 hour for me to make the strascinati.

I haven't posted in awhile, but this weekend was a score. I love North Italia Restaurant in Houston, and my wife's favorite dish there is their burrata tortelloni, but we're three hours away. We had the craving and so I looked and I managed to find most of the recipe and figure out the rest, so we gave it a shot this weekend. Worked perfectly!

Home made tortelloni stuffed with burrata cheese, olive oil, and salt. Cooked cherry tomatoes in butter, added homemade marinara sauce, topped it with with some grated parmigiano reggiano and some fresh basil from the garden. Served with home made pane casereccio (home made Sicilian style bread made from double-milled durum wheat flour and topped with sesame seeds). We served the bread with our family's olive oil from the most recent harvest that has a particularly good flavor this year. A definite keeper!

Because of COVID we haven't been back here in Sicily for over a year and a half. Finally made it back this past weekend. We went full traditional Sicilian last night. Everything locally sourced or grown here on the property and it was so good. Pasta alla Norma - simple, traditional, locally sourced., and so, so good. A real burst of flavors! The produce here is just better than what we get back in Texas. We made home made busiate for the pasta, added fried eggplant and sauted tomatoes, with garlic and ricotta salata. The olive oil is from our own trees here, the spices from our own garden, lemons from our own trees, and fresh baked bread. The wine is local too. It was a great way to celebrate being back. We've been working on our trees every morning before the heat, hoping for a good harvest this fall.

The olives are not pretty. Right now my oil comes from about 50-60 random trees scattered around the property, most on these steep hillsides. They're a beast to harvest, but it's still kind of fun. There are also some almond trees.


I'm trying to get serious about it though. I have about 160 more olive trees that were planted last year and won't produce for a couple of more years. They're in two different fields. Not pretty, but way better than the field of weeds it was before. Right now I import olive oil to Texas produced by my cousins in Sicily, but my goal is to import my own in about 5 years. It was an abandoned vineyard before we bought it, abandoned so long that the owner forgot it was there. After we cleared the land, we found the vines. We cleared them all away, but now they are back, so the second field is currently a vineyard in a field of olive trees. We're going to have to figure out how to deal with the vines. The new trees are doing well and easily visible in the field in the first photo. The ones in the field in the second photo are doing ok but are not as far along for some reason.



The grounds are why we have the place. Below is the herb garden, a view of the grounds to the west, and a view over the pool. Normally the ocean is an amazing blue color and the mountains to the west are gorgeous, but the scirocco winds came from the Sahara (100 miles away) day before yesterday. It was 94 on Sunday and 87 on Tuesday, but the scirocco on Monday,brought 109 with with terrible dust. The dust still hasn't cleared away, so the water is a dusty color here because of the haze.

Thanks! As for the oil, we don't have any retail space at this point. The majority is sold locally by word of mouth and hand delivery, but we'll ship anywhere. We've probably shipped to 10-12 states. Moroso's Pizzeria uses it for a finishing oil, and some caterers here use it too. It's made from Nocellara del Belice olives in Gibellina Vecchia, Sicily. The land has been in the family for probably 150 years. The oil is extra virgin, and I know the trees, the farmers, the bottlers, and handle everything myself from Sicily to Waco. You can message me for details on sizes and prices.

It will still probably be another week before everything is organized and put away.... half the stuff is in storage....

Now on to the Laundry Room, adding a Powder Room, and the Living Room.... This is going to be a long haul

Last night we tried something completely new, doing a different twist on tagliatelle. I infused olive oil by adding boiling water, saffron strands, and ground turmeric. Then after it absorbed all the saffron & turmeric I added it to the pasta dough, then cut it into tagliatelle. The pasta really had a ton of flavor. Then we went with a butter based sauce to go on it. To make the sauce, we added oil, shallots, ginger, ground coriander, cinnamon, cayenne pepper, pepper flakes and black pepper to the butter. We poured the sauce over the tagliatelle then mixed in freshly toasted pine nuts and fresh mint and parsley from the garden. The combination of the sauce and the infused pasta really had an intense flavor. I don't want that much flavor explosion all the time, but it was really good.

Added a salad of garden tomatoes with onions, capers, and our family's olive oil fromSicily and it was a really good meal.

Thanks. My wife is good in the kitchen. We cook together so this gives me something to do while she does the complicated stuff.
