I didn't even know it was gone until I saw a Trib business column headline stating a deal is about to close on the site. It was behind a pay wall so I don't know details of that, if the column even mentioned what might be going in there.

Don Carlos hasn't closed yet. According to the article, Don Carlos is preparing to leave the building and have an Asian dining concept replace it apparently.

Well I was going to say. I was at the Marketplace the other day and didnt notice it being gone. But I also thought well I was not really focused on that building at all.

I assume Don Carlos is going to close and not re locate then. I cannot think of a better part of the Waco area for a restaurant.

When he said that I was hoping that was not the plan for the building but it probably is what was meant by he "Asian dining concept" term in the Trib.

As a side note, I just looked up Don Carlos to see what was going on with the chain. Apparently, news to me, it isnt really a chain at all unless one considers a chain to mean more than one. There is apparently the original in Houston and a current location in Waco, which opened in 09 according to the website, and that is it. Evidentally the actual second location was near the Hobby Airport built in 94 according to the history portion. But there are only two locations listed on the website currently despite the history section listing 3 locations.

The photo in the Hueco/Dos Mundos thread said Sushi and HotPot which would be uniquish... Has anyone heard any more on the Korean BBQ place where Saffron was? I think when I first came to school there were at least 6 Chinese buffets, now I only know of two...

Actually giving them some business today. Like a Korean diner. Had the Korean corndog with the kimchee fries. Amazing. They also have a location off IH-14 near Pluckers in Killeen. I think it's in the old Potbelly space.

It is sitting vacant, great location with easy access. Surely the fact there was a gunfight there 10 years agp doesn't distract from the great location/ building there is now.

Somebody ought to be able to pick up that building on the cheap.

Anyone want to go in on Waco's newest biker bar? Why not just play the history of the place now that a decade has passed? Bikers will still love it and just pay off the county officials and everything else is forgotten.

They might, but Panera, Newks and La Madeleine all co-exist out there. And it's probably close to a half mile from BWW to Don Carlos.

As for dave and busters, how well does main event do in Waco? I'm not a fan of main event and much prefer D&B but not sure Waco could support both

everything I've been told by commercial real estate agents in the area about pluckers, pappas and other national chains is that the alcohol sales numbers for Waco don't support the investment for them to come.

I find that hard to believe. 30 years ago? Probably. Now? I see no reason to think Wacoans don't drink as much per capita as most other places.

I would tend to agree with your statement, but would add that Waco, in general, is still a very price-conscious market -- not just for entertainment such as food and drink, but also for services.

For example, I imagine a 'Nickel Beer Night' promotion would kill it here, whereas it might be hard to sell enough folks on a $19 'Cadillac' margarita to really stoke gross alcohol receipts.

Sure, those pricier mixed drinks can work in DFW and Austin, and Waco certainly has a group of folks who don't mind their bar tab being as much or more than their food tab, but I just don't think that there are enough of those folks here, yet.

I'm about 99.999% sure that is just trolling on purpose or repeating without critical evaluation an urban legend. One it flies in the face of the evidence with all of the new restaurant developments that have come to Waco since the mid 90s but really it was happening even before then. Lol the Baylor Club located on Baylor property sells alcohol and I'm sure quite a lot and their customers are primarily Baylor related.

It may be that the population has not hit the mark yet for Pappas etc. Chains do have a population base of a metro area under which they don't want to be located but casting it as it is hard to sell drinks in Waco is absurd.

If all decisions were made like that, there wouldn't be many profitable businesses at all.

I spend a couple days a week on average in DFW. If you compare apples to apples regarding product, I don't think there's much of a price difference. In fact, I think I probably pay less for high-end meals in Dallas than I do in Waco. At a minimum, it's close.

Since this seems to be a subject of interest here, I went to the Comptroller's website and took a few minutes to look up the most recent monthly mixed beverage permit receipts for Dallas County and for McLennan County.

While I'll grant I haven't analyzed these numbers in any detail at all (nor do I intend to), here is a comparison:
