Why does every offensive play seems like a Hail Mary, desperation attempt?

Maybe nobody can execute RVO
Shapen never makes a throw without ending up on his back. Rarely if ever is a receiver hit in stride streaking down the sideline leaving the defense in the wake.
Every other team seems to be able to do this on occasion.

Again, Shapen is decent in 2 minute drill. Art pretty much ran a 2 minute offense all the time so maybe that's the type of offense Shapen would thrive in. Presley and Cameron are coming around so maybe this RVO thing gets scrapped and plug Shapen into an up tempo offense.
It was almost always loads of fun to watch the Baylor offense under Briles. We were #1 offense in the country in most statistical categories in 2011-2015. If we can do that AND have a top notch defense like last year, we can dominate the conference.

They won opening toss..deferred. so they get the choice in 3 rd quarter. They took the ball. We choose field direction and gave them the wind in the 3rd. Is that right?

That's an admirable position to hold. But you can't control other people. You're not their parent. Just ignore and post positive observations that you feel suitable instead of telling everyone else what they shouldn't be posting. As I said, you have more knowledge and have probably watched more Baylor games than anyone. You have a lot to add that all of us can learn from.
