Had dinner at the location in College Station and met the person who is going to manage the Waco location. He said they are planning to open in October.

I love the place. It is expensive, but I see myself eating there at least once/twice per month.

I will drive by there some days on my way home from work to take a different route home and see how that area develops. That 12th Street cooridor is actually turning out to be really nice. They have done a great job. As long as you do not look on the left side of the street, you will be impressed.

The strip center where they are putting this Casa do Brazil is quite nice with good parking options. I am anxious for them to finish it up.

If Waco can develop their skyline a little more, several of these new places are going to have quite the view.

Speaking of skylines, this reminded me of something do I recall correctly something about a new commercial building that would be about as tall as the Alico (I use that as reference rather than use the term sky scraper) around 10th to 18th or so so between Franklin and 35? This would have been 2-3 years ago some plans for this were publicly discussed. For some reason I was thinking I remember the owners of Pivovar were involved with it. I have heard nothing more since.

Don't recall any commercial tall building discussion. There was talk of a high rise condo going up between the RR tracks and the 2 skanky motels across I-35/MLK from the stadium, but that seems to have gone the way of the Hotel Grant and Lady Donnell.

I recall a Waco Trib article a few years ago that described possible future plans for a high rise building to be built by the owners of Pivovar. It seemed to be a possibility for the future and not immediate plans for that time. It is disappointing that the proposed high rise across I35 from the football stadium has not seen success. It would have been an impressive 'Welcome to Waco' sight for I35 travelers.

One time went up to Oak and Ivy right at closing time (9:00 PM). They would not accommodate us.

Very disappointing. I would have dropped at least one Benjamin there that evening. Not really used to businesses that don't want to take your money.

And closing at 9:00 PM? If you are a bar or wine bar and closing at 9:00 PM on a Friday, perhaps you shouldn't have chosen that market or location to begin with.

I work late, come into town late, and so I eat and drink late. COVID took its toll on guys like me - and I am not even talking about the disease.

Yes, they are opening a "fast casual/American food" type place. They literally told Sammy they were going to make something kind of like George's, right there by Butcher's Cellar.

I think that is a monumentally poor business decision.

Sounds like a casual not as expensive version of Butcher's Cellar but with an bigger menu than BC if I am understanding this correctly and it is the Butcher's Cellar owners doing this. The thing is for that to work it is going have to be way less expensive.

Bubba's, Texas Roadhouse, George's are all the same style of food and all crowded. Even Brown's without the beer does ok. So it could work.

BC could just be in a bad location. Maybe too far out for big crowds like Uncle Worm's near China Spring is. Who wants to have food and drinks and then drive through Woodway cops to get home?

It's funny...So many people from CS will drive all the way to Original or Hewitt George's and drive all the way home.

And I wouldn't say those 3 are all the same style of food. They may all have some of the same style of foods, but their focuses are much different.

Where do people drive 3 hours to go see in that group? Butcher's Cellar is ok, but there are at least 5 restaurants within 20-25 minutes of it that are much better. If you drove 3 hours to eat there and skipped over Red Herring, 135 Prime, BLVD, Cheeves, Opal's, Diamondback's…..and several others….then I'm sorry.

You assume I was rude. I was actually polite to the staff upon being told they were closing. I had company with me, and I don't make public scenes, especially in polite company.

I actually agree with you.

If you own a business, you can close yourself off to the marketplace at any time you want.

You can also run yourself out of business.

That's the only point I was making. I think the place had potential with better management, but who knows given the location.

Nevertheless, I love living in a free country, and if you want to go invest your money in failure, by all means - knock yourself out.

Who knows? That location is still TBD. I think there is plenty of market available the Hewitt/ Woodway area for another George's style restaurant.

Looks like location is pretty locked in as this was picture they posted.

Guess they figure their Woodway market sees construction and knows where it is as they didn't indicate location which prompted my original comment.

You are right about closing at 9PM on Friday. If they didn't have the business to stay open to at least 11 or 12 then the location or market is not good.

I concur. And that has to be a scary situation to be in if you are a bar or restaurant.

I hope the owners got out early enough to try something else. I certainly had no problem with the place except for the hours.

If they didn't have the business to stay open to at least 11 or 12 then the location or market is not good.
Genuine question, not snark. What restaurants in Waco are open past 10 on the weekends?
