After having been to Guess and Helberg among others to me Guess has the best brisket in Waco. It feels like they use prime grade aged beef. Although after having been to various places around Texas and despite all the new places that have opened up in Waco I feel there is still room for a better overall bbq place

Just tried 310's Kitchen this weekend and highly recommend you try when you're in town. The brisket is every bit as good as Guess BBQ and the sides are definitely better. I had blue crab deviled eggs which were awesome. The bonus is it is cheaper and faster than Guess BBQ. It is a food truck now with a nice patio and arbor but Tony already owns the building next door where he plans to move eventually.
It's on Elm just a couple blocks off MLK. If you get to Lulu Jane's you've gone too far.

Thanks, Pam. Will definitely give it a try the next time I'm in town. Drove by yesterday actually and wondered about it but was picking up a to go order from Revival Eastside Eatery - another gem on Elm Ave!

From their Facebook page it looks like they are open Saturday only from 11-5. I hope that changes.

They covered their Sunday brunch breakfast items - pulled pork pancakes and steak and eggs. I haven't tried the Sunday brunch yet but definitely on my list now!

Hit up 310's Kitchen today for lunch and tried most of their menu. Spare ribs were excellent as was the beef rib. The brisket was very good. Sausage was just okay. As far as non-BBQ, their crab cake was great but small at $10 in my opinion. The baked mac & cheese was very good.

Overall, I'd give it a 7.5 out of 10 and will go back. Quality is fairly close to Guess/Helberg/HTK level, which are the Waco BBQ leaders in my opinion. Pretty impressive for such a small set up. Tony and family are great. Service might be slow if they get a handful of people all showing up at the same time, but good BBQ is not meant to be rushed.

Good question; I honestly didn't pay too much attention to the prices but know I spent $75 (after tax, before tip) and got a half pound of moist brisket (I think they gave me more than that, though) one beef rib, a pound of spare ribs (again, seemed like they gave me more than that) one sausage link, a crab cake ($10) and family size mac & cheese. I know they charged me $20 for the beef rib that was slightly smaller than the one I got at Helberg a little while back and that was closer to $40 then. So $30 of the $75 was between the beef rib and crab cake, so seems in line with or maybe slightly less than Guess/Helberg with my napkin math.

And the window opens a little. They will be at the Friday Night tailgate at the sic 'em 365 container tonight. I hope we can get a good enough turnout to make them a regular feature.

I still love Jasper's and Demaria's. Italian style barbecue in East Waco, great history and the crowds are great. I go there frequently. But I have to confess I do not think quality wise they match Guess or a Heidelberg. And even honky-tonk kid is selling some really good stuff. It's a good problem to have these days. You just have to eat a lot of meat. Oh well.

This video shows Demaria's BBQ technique. I admit, I was surprised. This might be the "Italian" style mentioned above which is similar to Italian Beef for sandwiches.
