That's not just a school assignment, that's a research project and the students are the participants. That data being collected is on the students' perspectives and opinions. Protection of human subjects requires informed consent for participation in research and minors are legally incapable of providing that consent. The argument would be made that it is exempt because it is in the context of a class, but they wouldn't allow people to test medications on kids in class and this is a difference of degree rather than kind.

All human civilizations are basically inherently religious and driving 1 religion out of the public sphere just means another will come along and replace it.
Rod Dreher had a post were he talked about the emergence of "secular religions" since the French Revolution...things like radical nationalism, Fascism, Communism....and how they were created to replace the Abrahamic religions that came before them.

I would not count on it being a passing fad.
If you can influence kids into embracing LGBTQ…and you obviously can per the statistics…then you will have even more people in the future trying to influence/indoctrinate more kids
